Take a chicken cutlet and pound it to about 1/4" thick with the flat side of a meat mallet. season with salt and black pepper. Mix an egg in a large flat dish and put plain breadcrumbs in another dish. Dip the cutlet first in the egg, then in the breadcrumbs. Heat a pan with olive oil and a little butter over medium high heat. Fry the schnitzel in the oil. Serve with lemon wedges. Guten Appetit!
