If you are taking straight from the plant look for strong bunches and bright green foliage. cut from about 2 inches from brussels.

if you are buying at supermarket look for similar things without drooping or discolouring

it depends how u want it if u want it in chucks then just cut off the top then cut the others in litlle pieces just cut one piece at a time
you chop brocoli by taking a steak knife, chop it in half... there you go! you have a chopped brocoli!!!!!!!
