I would suggest braising it. Julienne a whole head (this doesn't need to be done well) an put into a pot that has a lid, and add 1/2 cup of apple cider vinegar and 1/2 cup white sugar. Bring to a boil, then cover and reduce to simmer for about 40 minutes. season appropriately with kosher salt and fresh cracked pepper. Or you can always make cole slaw...
