Most salt if mined by a mining company filling up a hole with salt water (normally sea water). They then evaporate the water leaving the salt behind. It is then separated from the other minerals that are in sea water.

I'm not sure exactly what you are trying to do, if you've oversalted food, there's not a whole lot you can do about it, except perhaps redo the recipe to double the amount, only omit the salt, and then mix the two together. If you are trying to extract the excess salt from a salt cured ham, you would soak it in water for a couple of hours, and let osmosis do its thing, removing the ham to rinse and replace the water every so often.

There are two distinct methods of getting salt from rock formations.

• The first is to mine the salt below the ground like any other ore. The salt is extracted from the formations with macnes or explosives and roughly ground to a size suitable for transportation to the surface. The salt is further ground until the rock particles can be removed mechanically by sifting. In some caes the salt is dissolved and the solution evaporated to make aneven purer product.
• The second is to drill down to the salt beds and circulate water into te beds. The rock salt solution is filtered and dried by repeated processes of crystallization/recrystallization by various types of industrial evaporators to make crystals of various sizes and grades.
