It actually depends on the factors that contribute to the whole body of a person. Normally, a person can last a few days without food - only water.
With sufficient nutritious food and plenty of water, a person can survive indefinitely.

I live in the Chihuahuan Desert and two months back a married couple and their son went into the desert to hike when the temperature was over 100 degrees F. They each had a small bottle of water. Within a few short hours both parents were dead. The son only survived because the parents had given him their bottles of water. Each person needs to carry at least one gallon of water for each person per day when in the desert.
The old rule on it this is: A person can go up to four weeks without food. As much as four days without water. No more than four minutes without air.
A healthy person could go approximately 30 days without food but you won't last to long without water!
