Places that specialize in buffets can handle this several ways. One is to place the serving containers in refrigerated buffet serving tables and/or on beds of ice. Another is to not put everything out at one time. Refills are kept refrigerated and brought out as needed.

This depends somewhat on whether heating is provided for hot foods and cooling for cold foods, since the real determinant is food temperature. However, as a broad rule of thumb, about two hours is the limit in an interior, temperature controlled space. and basically if you leave the food for more than 2 hrs the food will go off and start to stink
