Mozzarella will keep, although drying, exposed to the air for up to a week before risking bacterial contamination. This is assuming it is in a fridge. If it isn't, then just one day is all it takes to make it unsafe to eat.

To soften cream cheese without a microwave, you can leave it out at room temperature for about 30 minutes or place it in a sealed plastic bag and submerge it in warm water for 10-15 minutes.

casu frazigu is maggot cheese...the cheese maker allows flies to lay eggs in the cheese-then the maggots swim throught the cheese and leave a flavor in the cheese.(it is disgusting)
I used a metal ramekin (you could use glass too) and put the mozzarella cheese inside. Then fill a sauce pan with a small amount of water and put the ramekin in the water (not enough water to make the ramekin float). Heat the water carefully (don't leave it unattended) until the cheese melts. Try to stir the cheese while heating, but be careful not to let the steam or metal burn you. I used a chop stick. :) Worked great and I poured it on chicken enchiladas!
Yes I agree with your husband that there is no reason to remove the inner foil lid as it simply provides an additional seal of protection.
