A week in the fridge is probably the max, but it's easy to tell if it's bad...it'll look sorta glossy and taste sour...it's one food that's easy to tell if it's bad...it freezes quite well though Cooked potatoes quickly develop an off flavor that is not very good and there's not much you can do to prevent it. Cooked potatoes are best right after cooking. One day is all I'll keep potato leftovers.
