How long can fresh chilies keep in the fridge?

Never store whole peppers in plastic; they'll go mouldy fairly soon. Keep them in a paper bag, the sort used for fresh mushrooms, and store them in the crisper. They'll keep forever, gradually drying out. While fresh you can chop or slice them, and as they eventually dry you can add them whole to sauces and casseroles at the stage when the onions are nearly ready. Taste the sauce from time to time and when the desired heat is reached, discard them. At any stage, but especially when dried, you can simply put some in pots or close to the soil surface in sunny parts of your garden; you'll be rewarded with the delicious fruit forever. Harvest the fruit as soon as it turns red, but also pick some green fruit, which will usually turn red if left on a kitchen bench; then you can paper-bag it for refrigeration. Picking green fruit stimulates the chili bush to produce more flowers and. subsequently, more fruit. Don't try to keep birds away from your chili bushes; they eat pests and though they take the occasional chili they do the right thing by processing the seeds through their digestive system and planting them all over the place. Making fresh water available to the birds encourages them to do their planting in your yard rather than the neighbours'.
