NEVER thaw on the counter.
If still frozen a few hours before it goes in the oven, put it in a large pot of cold water in the sink. Turn the faucet on to a bare trickle and let it run.
If your bird was completely frozen, this method will take about 3 hours.
Pat bird DRY, DRY, DRY before you put in oven. Otherwise you'll have soggy skin.
at 300 degrees Celsius, cook it for about 17-20 minutes per pound, but for well done roast cooked to perfection, take it out when your meat thermometer reaches 150-155 degrees.

For a 3 lb pork roast, smoke it for about 4-5 hours at a temperature of 225-250F for optimal flavor and tenderness.
For a 3 lb pork roast in a crockpot, cook on low for 6-8 hours for optimal tenderness and flavor.
I use the rule of 11 min per lb, it seems to work best for me. Jim
