It depends on the temperature of your oil. If it isn't hot enough, the fries will take longer to cook and they will absorb oil and be more greasy. If your oil is too hot, they will brown on the outside and may not fully cook on the inside.

  • Wash and drain your fries and dry them with a towel.
  • Your temperature should be at 325 degrees F for regular-sized fries. For shoestring, basket-weave, etc., the temperature should be 375 degrees F.
  • Add the fries to the hot oil in small batches to prevent too much lowering of the oil temperature.
  • French fries should be done in 5 - 6 minutes. 2 - 3 minutes for shoestring, etc.
  • Stir them around a bit occasionally.
  • Spread them on something absorbent. A brown paper bag works great for this. I buy the lunch type brown paper bags and use them for everything I fry.
  • Let them cool a few minutes.
  • You can stop here and serve the fries, but a second bout in the hot oil will give you the delicious results you are looking for:
  • Raise the temperature to 375 degrees F and fry about 1 - 2 minutes or until they are crisp and golden.
  • Remove from the oil and drain again on your paper bag.
  • Sprinkle with salt and you're ready to serve your perfect fries!
