To be safe, do your figuring in doubles, but "fudge" a little, so it's more like 1 & 1/2 to 2 per person. For baked potatoes, at least 1 per person, so make 2 per person, total 12 potatoes. You should always 1 and 1/2 or double mashed potato recipes when you aren't sure how much each person eats generally. So 12 potatoes would be 24 for mashed. In casseroles, you'd use about half to three-fourths, because the casserole has other ingredients. If sliced and browned with onion rings, at least double.

The good thing about potato dishes is most people eat it and eat more than they think they will, and with potatoes you can always use the leftovers, such as mashed potatoes for fried potato cakes.
