They are both from the gourd family, but a pumpkin seed grows a pumpkin and a squash seed grows a squash.
Cooked squash seeds cannot grow into new plants because the cooking process kills the seeds and destroys their viability. For seeds to germinate, they need to be raw and untreated. If you want to grow squash, it's best to use fresh, raw seeds from an unprocessed squash.
