Generally the milk used to make it is pasteurized. That's not to say that all of it is though. If you were to buy from a small farm/producer, there is a likelihood that it is truly fresh mozzarella, in which case it may not be pasteurized. If you're getting it from a store, read the labeling. It should say so on there.
