It depends. If you already have the roots and part of the stem, you can cut the stem off (leaving the roots) in just two or three weeks. Then you can wait a while before it grows from the root again. But if you are starting with the seed, it will take much longer, however, I recommend you to just buy leeks from the store, plant it, and harvest that way. :)
