How much turkey you need for each person depends on the size of the individual turkeys. Turkeys under 12 pounds have less meat on them so you would need to allow 2 pounds per person. For turkeys over 12 pounds, you should allow 1 1/2 pounds per person. For 70 people you would need between 105 and 114 pounds of turkey.
Wow. Depends on what you plan to serve. If you're only doing hors d'oeuvres, then you might want to have someone help you with this. Typically you want to have 6-8+ pieces if you're only doing hors d'oeuvres. If you are going to do a main dish, try doing pasta. It can be modified a million different ways and it is much easier to make in bulk, but you will need to keep it heated.
No matter what you plan on serving, you're going to need some way to present it and keep it warm. Chafing dishes are most common in restaurants, but they are great for use at home as well.
