It depends what is on that cucumber sandwhich. It also depneds on the bread you use. But if it's just cucmbers between two slices of wheat bread, I would say that is pretty healthy. Just keep in mind that a diary like cheese and a meat like ham or turkey would make your sandwhich have all the right food groups. Except for fruit which could be worked in with a fruit smoothie or apple wedges on the side. A sandwhich is very universle.
