You can, but they are much more tasty when you cut them into disks, dip them in egg and then bread crumbs with parsley, tarragon, garlic salt and pepper and fry them up in some oil. I've been in some Mediterranean countries where they coat them in olive oil and champagne vinegar, salt and pepper them, put a thin slice of pancetta and feta cheese on top of them as a raw salad. But I still think the green raw tomatoes don't taste nearly as delicious as red.
