Masa harina is sometimes confused with cornmeal. Masa is made soaking cornmeal in lime water, then grinding it into a fine flour and an agent is (optionally, but commonly) added to prevent caking. By adding the anti-caking agent, you create a compound, but cornmeal is ground fairly coarse, and no caking agent is required.
