My mother used to make a nice vegetable lasagna with no sauce, its main ingredients were spinach (a superfood), julienne carrots, lowfat cottage cheese (instead of ricotta) and low-fat mozzarella cheese. Mix spinach, carrots, cottage cheese and half of mozzarella to make the filling mixture, it should be moist and spreadable. Layer between cooked lasagna noodles, and top with remaining mozzarella. Of course, the ingredient amounts will vary based on size of recipe, and I would add garlic and salt and pepper to the spinach mixture, and maybe a little olive oil. Bake in a 350 deg. oven for about an hour, covering with foil for the first 45 minutes.
Taco sauce
The main differences between enchilada sauce and taco sauce are their consistency and flavor profiles. Enchilada sauce is typically thicker and richer in flavor, often made with ingredients like tomatoes, chili peppers, and spices. Taco sauce, on the other hand, is usually thinner and has a tangier taste, with ingredients like vinegar, cumin, and garlic. Additionally, enchilada sauce is often cooked and used as a base for enchiladas, while taco sauce is usually served as a condiment for tacos.
Taco sauce is a mixture. It is made by blending various ingredients like tomatoes, peppers, onions, vinegar, and spices together. These components can be separated and do not chemically bond to form a new substance.

Tomatoes, onions, cilantro, and a light sauce that's called (I think) "Fiesta Salsa Dressing," which probably just contains seasonings and such.
