Ha ha, the guilt! Yucca is like any other starchy vegetable, I would imagine.

Much like potatoes, parsnips, salsify, and celery root, for example, Yuccas provide delicious minerals when cooked gently with other natural ingredients. Like those others, however, they are going to be fattening when dredged in flour and fried, which is how many domestic restaurants make them palatable to us Americans.

It is my belief that yuccas can be a great source of nutrition when eaten as part of a pH balanced dinner. Serve them as a bed for a big pile of tasty collard greens that you braise with just a few ounces of some leftover meat in your fridge, and you can impress your company without inflating your favorite party dress.
