An unsaturated fat has one or more fatty acids in which at least one carbon atom is using two of its bonds to link to a neighbouring carbon atom, so it only has one bond spare to link to hydrogen. This double carbon bond forms a kink in the chain giving it a less compact structure and there fore giving the substance a more liquid form, as in olive oil.
