The white should have a clearly defined edge and not look watery near the edge. The membrane surrounding the yolk gets weaker as the egg gets older, so fresher egg will be easy to separate. If your yolks keep breaking, even though you handle them gently, your eggs are probably past their peak freshness. Color can tell you about the quality of the hen's diet and the overall health of the hen (orange is the best, pale yellow the worst) but it is not an indication of freshness.

True spoilage is easy to notice, after you break the egg. The scent of bad egg is unmistakable sulphurous. Don't worry, you will know for sure if your eggs have gone bad.
