You need to be polite to people. A mean-spirited person doesn't make for an inviting atmosphere. You have to learn fast and take direction well. It's a fast pace business and people seldom have time to sit down and explain in full every detail. Hygiene is also very important. You don't want to ever come to work dirty because that tells onlookers that your restaurant is probably dirty or worse they don't care about the way they serve you. You must know how to serve people. People like friendliness but they appreciate speed, accuracy and someone smart enough to know when to come to the table and when to let the customer eat in peace.
