Later its point of harvest within the growth cycle, separation and transport followed by packaging, storage, self life, price and merchandising product placement (which may be influenced by product positioning, advertising and local promotion). Eventually it's temperature and pressure with water content being the critical factor to it's full expression and genetics and proper preparation to it's ultimate success.
