My two favorite uses are to dilute it with some oil and lemon juice and user it as a salad dressing -- Great Mediterranean flavor -- and to roast baby eggplants for a couple of hours, and when soft, slit them open and dump in a spoonful of seasoned, garlicky tahini. It makes a terrific sandwich spread with almost anything -- cheese, deli, vegetables, etc. Nice over grilled meat as well.
