Chocolate originates from Cocoa beans (also called cacao beans) which are dried seeds from the Cacao (pronounced kah-kow) tree (Theobroma Cacao). Cacao trees grow in Africa, Central and South America, and parts of Asia. Cocoa beans are the basis for chocolate, cocoa butter, and many Mesoamerican foods such as mole sauce and teiate.Chocolate is usually made by grinding the Cocoa beans, and adding milk and sweeteners. As a 'candy', chocolate is a sweet, or a mix with hot milk, as Hot Chocolate. It is often used in snacks and pudding.This is what we nowadays call chocolate. What we call cocoa (a variant spelling of cacao) is what most people called chocolate more than 100 years ago. The Aztecs (and other Mesoamericans) drank this during their rituals over thousands of years, until their civilization was destroyed in the 16th century by the Conquistadors.There are several different types of chocolate, such as Milk Chocolate, Dark Chocolate, and white chocolate (which is made from cocoa butter). Additives include caramel, coconut, and fruit and nougat fillings. Companies that produce expensive chocolates include Ghirardelli and Godiva.Some individuals, however, are allergic to chocolate; and in large amounts is toxic to dogs.It is heaven on earth.
