It could be a few things or a combination of them. Most likely the crab is stressed or sick. This can happen if it's by itself (hermit crabs live in large colonies in the wild), if it's tank environment is not suitable (you need 80 deg F, 80% humidity, moist coconut fiber or sand substrate, etc) or not getting the right nutrition ("hermit crab food" sold at pet stores often contains hermful chemical and preservatives), not the right kind of water (they need deep dishes of both fresh and salt water). Or he could have been attacked by another crab.
