I would boil 12 pounds of rice in a large pot. - do not measure the water to rice, -use about 3 gallons and put rice in when it is boiling, let it boil approximately 10 minutes then drain off the remaining water. ( This works with white or yellow rice, but longer time for basmati or wild rice.)
