A brigade in food service is a group of chefs that work in a kitchen. Usually there is a hierarchy with the head chef in charge, the sous chef is her second in command, next comes chefs de partie. there will be one charge of each section- starters, deserts etc. Then there's the commis chefs who will usually be doing food prep, and finally the dish washer.
