Canners are the smallest legal size lobster sold and are caught only in selective areas during the spring, summer and fall seasons. (The name "canner" comes from the fact that they were once used exclusively to process "canned" lobster meat)! The meat of the "canner" lobster is sweet and succulent and the price is normally lower than "market" sized lobsters, although it takes considerably more time to extract the meat from the shell. Canners are sometimes sold by the dozen "tank run", which means the way they are dipped from the tank, therefore, expect a variety of sizes, some with two claws, others with one or even no claws! Kind of "the luck of the draw"!
