To be pithy is to have soft or spongy tissue. This happens when a watermelon is over-ripe. You anticipate a sweet, crisp watermelon flesh with that marvelous flavor, then you open the rind to find mush, fibrous sometimes hollow cavity that has no taste and is only good for feeding to the chickens. Some people also refer to an under-ripe, pink, no flavor watermelon as pithy.
