I would recommend going with two different knives: one best suited for cutting vegetables and one best suited for cutting cheese. A good vegetable knife would be the Henckels Four Star II - 3"" Vegetable Knife. It slices wonderfully and easily. A good cheese knife would be the Wüsthof Gourmet 4 1/2-Inch Cheese Knife. It won't stain, lasts a long time, and has a great sharp edge.
