Jigg's Dinner, is a traditional Newfoundland meal consisting of salt beef, potatoes, cabbage, carrots, turnips, and onions. It is usually served with pease pudding or dumplings. The salt beef is soaked in water over night to remove some of the salt. It is drained, then re-filled with water and the pudding bag is added. Boil for about 2 hours, then add other ingredients and boil until the vegetables are tender. Serve with mustard picles and pickled beets. Good stuff!!
