Depends on the project. Celery is good to demonstrate the xylem and phloem of plants. Carrots are good in an airtight container to demonstrate the release of gas (ethylene, I think?) Potatoes are really tubers, but can be used to show root growth. So, again, it just depends on the point you're trying to make.
