An auslese is a form of sweet wine, found especially in Germany, made from late harvest grapes, from the German Auslese category.
Late harvest wine is when they harvest wine at a certain time after normal harvest, the latter you harvest the higher the sweetness of the resulting wine. This could take place 5 months after the usual harvest date. Ice wine is a form of late harvest with a stipulation! The temperature must be a few degrees below freezing (legally it is -7 Celsius for Germany and -8 Celsius for Canada). One the grapes are pressed the sugar rich liquid is used to made the wine whereas the ice crystals are left in the press.

In the Northern Hemisphere, vineyards in Cyprus begin harvesting as early as July.
