Well this is not a wine so its off topic but some islanders in the south pacific brew coconut toddy. Apparently they pour coconut water into a hallow bamboo shallow section and let it ferment it in the sun for a while.After a day you get a strong tasting juice longer then that and apparently you get an extremly strong alchol toddy.
