Galaga used as "spice" is the ground root of the Galaga Ginger Plant, a species of ginger known in Thailand and other Southeast Asian countries such as Malaysia.

It is used as an herbal remedy (tea) and as a flavoring in meat and vegetable curries served over rice, such as the famous Panang Curry which takes it's name from a city-island off the cost of Malaysia. Usually galaga is ground into a paste or powder and incorporated into the more complex curry paste, which may contain a number of other ingredients such as chili, turmeric root, dry shrimp, lemon grass, garlic and other spices.
