it is when the lettuce is bolting in the heat. It gets bitter. you gotta cut that part off and dunk it in cold water for a few min and then dry really well and put in your frige for a few days. if your fridge is not cold enough, turn the temp up. But if you just find it you can rinse it off and you can let it sit in the cool fridge. it is when the luttace becomes bitter and you can wash it well and dry well and set it in the fridge a few days to sweeten back up.
