What defines an ice cream, sherbet, or sorbet is the milkfat content. Ice cream has the most, sherbet less so, and sorbet none. While sherbet is similar to ice cream, it is not the same thing.

Brix measures total dissolved solids while Total sugar is only a measure of sugar content. Higher sugar content will raise the brix measurement, but higher brix measurement does not always mean there is a higher sugar content.
Total solids content is the entire residue left after complete evaporation of water from milk. This includes fat protein, lactose and mineral matter. These solid constituents exist in milk in a mechanical mixture.

The suspended or colloidal particles, commonly referred to as total suspended solids (TSS), are all the extremely small suspended solids in water which will not settle out by gravity.
