Cinnamon, leaf spices - eg. curry leaf, flower spices - eg. saffron, fruit spices - eg. cardamom & seed spices - eg. Sesame, mustard. These spices make Indian cuisine EXOTIC and mouth watering. The knowledge of spices and their right combination in cooking is an art.
