What were the conditions of meat of the meat packing plants in the late 1800's and early 1900s?

i just watched a video on The Jungle today so i can contribute some. :)

• poisoned rats shoved into meat grinding machines
• diseased animals slaughtered for meat
• filth was everywhere
• filth and leftovers swept from floor sold as potted ham
• (this is the worst part :P) sometimes when workers fell into the grinding machines they are simply grounded along with animal parts and packed and sold as ham or whatever DX (this is mentioned in the book, but it was never really found to be true.)

The problems with the meat factories in the 1900's is that the meat very often would be spoiled, crawled on by rats, and was still sold.
