After the tree is cut down you have to wait a year, until you see little shoots, within these shoots is soft inner bark, which is then dried and voila you have cinnamon! The reason cinnamon is curled is because when the bark dries it rolls itself up into what we know as cinnamon sticks, if you want powder cinnamon it's just the grinding of cinnamon sticks.
