I would say that the fruit dies immediately, since it ceases to do all the things that living things do (e.g. growing). From that moment on, it will gradually decompose, and the nutrients in it start to break down.

However, we can still use the fruit (e.g. for eating), since it is still high in nutrients. After a while, mould will set in, and it would not be a good idea to eat it.

Similarly, when a human dies, they also cease to grow, etc., and they will start to decompose - but there is a certain time when they will still be like a sleeping person, and you would not be able to tell the difference without medical tests.

When you pick a fruit from its tree/vine/bush, its life support system is cut off. That said, we could liken this to someone suffocating - an air supply could be considered part of their life support system, but you might say that they die gradually (i.e. over a period of seconds/minutes), rather than immediately when they stop breathing.

Make of that what you will. :-)
