Rye bread is often associated with Germany, but it is common in all of Northern Europe. Rye as a grain is more suited to the growing conditions found in Northern and Eastern Europe than wheat and consequently rye bcame the commonly available grain with which to make bread. It is low in gluten so makes a rather dense dough which does not rise as well as wheaten bread hence the development of the very dense pumpernickel style of rye bread. A contrasting way of dealing with the gluten deficiency is the development of the swedish style crispbreads.
