It's possible that neither is in meat loaf. It can be made with any ground meat (or soy blend, if you're a vegetarian). Using pork and/or veal will change the flavor but they aren't necessary.
Veal is healthier, from the point of view that it has less fat. However it is less ethical, since what you are eating is a calf that has been locked in a small room all it's life. I'm not saying don't eat pink veal, which is free-range and ethically not too bad, but white veal is very controversial because it is very unethical how they raise and kill the animals.
