When the seeds are crushed and moisture is present, they can contribute to the formation of allyl isothiocyanate (AITC), which is a major contributor to mustard’s characteristic pungency and sharp aroma. The important point is that strong smell or pungency does not necessarily mean better quality or purity. Its intensity can vary with the mustard variety, seed condition and processing method.
