Carrots contain a orange-yellow pigment called carotene, which is similar to a compound called "visual purple" that's important to vision. This is why people say carrots are good for your eyes. Many other vegetables (such as spinach) also contain carotene, though it's particularly noticeable in carrots since in them it's not masked by the presence of chlorophyll as well.
