this is so when the hen sits on the eggs it wont break

you cant break an egg in your palm long ways because you cant supply enough pressure to break it the egg is stronger from top to bottom then it is side to side

it is just how you do it really it doesn't matter how you break it, just make sure you get no shells into whatever your cooking :)
