Bok choy, celery, lettuces, leeks, and many cabbages grow right at ground level. Any wind or rain could blow dust, dirt, sand, or even animal fecal matter in between the leaves/stalks. So, you need to wash them.

This goes for all vegetables - the farmer does not seal the field in a plastic bag, so there can be 'foreign objects'.
